I have been doing big groups workshops. My suggestions would be to focus just in two concepts:
1) Warm-up for about 40 minutes.
2) The topic you would like this group to discuss.

Ziplock bags and resealable bags have been my best asset for porting and sorting the Lego kits. Actually we had the same issue but internally. As I introduced the methodology to our company Haufe we started out with a standard set. With more and more facilitators joining our internal LSP community we did the following set up of bricks as they need them for the workshops:

The group will be 50/50 partially sighted to sighted so it will definitely be a challenge. I will make sure that I give extra build time in my roadmap.
